The technology of Donghu Shanxi mature vinegar is originated from Meiheju vinegar workshop established in 1368. The main process including five stepson: Steaming, Fermentation, Fumigation, Watering and Aging  exquisitely manmade, which can maximally preserve the nutrient of  materials. The technology is honoured as China Intangible Cultural Heritage.
